Coffee Rockstars: Valentine's Day Edition

We gave some of the Philippine's coffee rockstars (some of the best in the industry!) a few fun questions to celebrate Valentines Day.

What was your first memory of coffee?
“11 years ago. First time to order in Starbucks. (First time ko din mag coffee sa labas!) I was expecting an ice blended drink but I ended up with cafe latte, and I was like. ‘Bakit ganito ung coffee nila sobrang pait.’ Di ko alam may condiments pala sila. At hindi ko din alam ung tawag sa mga coffee noon.”

How did you end up in the coffee industry?
“I studied a barista course because of my curiosity about the machine (na-amaze talaga ako sa espresso machine). Hanggang sa nag go-grow ang knowledge ko sa coffee. Malaking mundo pala ang coffee world. I’ve been doing this for almost seven years. I super love it! And there’s lots of things to know and learn pa.”

Is there a coffee that makes you feel romantic?
“Siguro kung di ko alam ung Commune cafe, tapos my date will bring me there and they will serve me the 3D cappuccino saying I ❤️ U. Corny ko. Pero totoo kikiligin ako. Hahaha!”

How would you say “I like you” through coffee?
“Can I put tons of sugar? Masabi ko lang na sobrang sweet ko sayo and I like you very much?”

What was your first memory of coffee?
“My first memory of coffee was dunking my pandesal in a cup of hot instant coffee. It tasted amazing.”

Is there a coffee that makes you feel romantic?
“The coffee that makes me feel romantic has to be our new signature coffee, Jack Frost. It’s made out of espresso, homemade cinnamon wild honey, and milk. Cinnamon always lights a spark.”

What coffee would you order on a first date and why?
“The coffee I’d order on a first date? Probably any unique single origin via v60. An entire conversation can stem from just a single extraordinary cup.”

Have you ever had a crush on a customer?
“Yes, she walks into the shop with me every day.”

Marika

Barista, MA+D Manila

How did you end up in the coffee industry?
“I became interested in manual brewing and started buying the equipment so I could brew at home. My SO found MA+D Manila and introduced me to Abbi and Xian. Eventually, we became good friends until we started brewing behind the bar for them. Now I brew for popups and events.”

Is there a coffee that makes you feel romantic?
My SO’s cold brew that he packs for me when I have trips. But to be honest, when you love coffee, any great coffee is like a hug in a cup. Especially when brewed with love.

How would you say I like you through coffee?
“Brew a nice sweet, clean, and fruity coffee and pair it with local single origin chocolate.”

What coffee would you order on a first date and why?
“I would suggest a cold brew or a cold Aeropress. Cold because if you’re excited for your first date, you might forget to blow your coffee!”

What was your first memory of coffee?
“First time I tried specialty coffee was in Singapore, I think back in 2013 or 2014. In Chye Seng Huat Hardware. I can still remember putting a spoonful of sugar in my cup. And for some reason, I can’t understand where a certain flavor is from. From that moment I was curious with the coffee so I bought the same coffee, brought it back home and tried making one. Then I realized its not the same with what I drank. Later to find out that a filter coffee machine will be different from an espresso machine! From there on, I tried researching more about coffee.”

How did you end up in the coffee industry?
“When I was taking up classes in BCAA(Barista Coffee Academy of Asia). I had the opportunity of trying different coffees from a CQI Arabica Grader class. I was offered a coffee that will taste similar to blueberries and grapes. When I first heard about it, I was really hesitant in believing them, but when I tried it out, it indeed has flavors similar to the fruits mentioned. Then they explained about specialty coffee and how it should have certain flavors and not only chocolate and nuts. From that point I was in awe, I felt like a kid who had his first taste of candy in a candy shop full of different kinds and I cant wait to try more. From that point, I decided this is the path I want to explore. I want to explore more about specialty coffee and also introduce it to more people the way it was introduced to me. From there I really focused a lot about coffee, from
brewing to espresso to coffee roasting. I wanted to know alot about it. It’s a craft that I really wanna master.”

Is there a coffee that makes you feel romantic?
“Probably a warm Ethiopian mocha.”

How would you say I like you through coffee?
“I still like to order an espresso first before anything else.”
